

1 large onion finely chopped
2 celery sticks finely chopped
2 leeks finely chopped
3 medium potatoes diced
600ml milk
200ml fish stock
500g smoked haddock cut into bite sized pieces
1 medium can of sweetcorn drained
1 spring onion finely chopped on an angle for garnish
Melt the butter in a large non stick pan over low heat, add the chopped onion,
leek, celery & potatoes cook for 10 mins.
Pour in 400ml milk and top up with stock. Bring to the boil, reduce to a simmer
until the potatoes are cooked (another 5 mins)
Meanwhile pop the fish into a separate pot with the remaining milk and bring
to the boil, then strain the liquid into the chowder mix. Set aside the fish.
Tip the sweetcorn into the chowder mix & gently heat 1 min.
Ladle half the chowder mixture into a food processor and whizz until smooth.
Return to pan and pop over gentle heat - flake in the fish
Gently heat the chowder until hot and ladle into bowls topped with spring
onion & serve with brown bread!!
6 Skinless Chicken thighs
2 tablespoons of honey
2 tablespoons of soy sauce
2 garlic cloves finely chopped
1 tablespoon of grated ginger
1 Lime zest & Juice
Preheat oven to 210 degrees or gas 8
Pop the honey, soy, garlic, ginger & lime into a bowl and combine until
smooth .
Add the Chicken Thighs and mix well - if you have some time leave to marinate
( can be left covered in the fridge for 24 hours)
Transfer to a foil lined baking tray or ceramic baking dish and pop into the
oven for 20 mins.
Serve with steamed basmati rice and broccoli & sugar snaps peas

1 200g mixed beans drained & rinsed
1 red chilli deseeded & chopped or ½ teasp chilli flakes
1 clove of garlic finely chopped
1 can of chopped tomatoes
2 tsp brown sugar
2 tsp balsmaic vinegar
1 medium ciabatta cut half then quartered
2 tsbls grated mozzarella cheese
1. Pop the beans, chilli, garlic chopped tomatoes broan sugar and balsamic
into a saucepan and bring to the boil, then simmer for 5 mins.
2. Pop the ciabatta under the grill and toast on one side, turn over and top
the 2nd side the mozzarella cheese.
3. Season the bean mixture to taste and pop over the cheese ciabatta
